Whether you’re popping them in lunchboxes or making them for a special treat, slices are a go-to favourite for many busy mums.

Made with chickpeas instead of flour, this healthy slice is easy to make and will really hit the spot when you’re craving something sweet.
Enjoy them yourself AND give them to the kids – they’re so tasty they probably won’t even realise they’re good for them!

Here’s how you make coconut chickpea blondies:
Ingredients
- 5ml Coconut Oil
- 2 X 400g Chickpeas (Canned, drained and rinsed)
- 125g Almond Butter
- 80g Maple Syrup
- 1g Cinnamon
- 2g Sea Salt
- 1g Baking Powder
- 1g Baking Soda
- 30g Unsweetened Shredded Coconut
Step by Step Instructions
Step 1
Preheat oven to 180ºC and brush a baking dish with coconut oil (use an 8×8 tray for 16 blondies)
Step 2
Add all ingredients to a food processor and process until smooth.
Step 3
Spread the batter evenly into the tray. (The batter will be very sticky, so brushing a spatula with coconut oil first will help.) Sprinkle extra coconut over the top and press in gently.
Step 4
Bake for 20 to 25 minutes or until toothpick comes out clean and edges are slightly browned. Let cool for 20 minutes, then cut into squares. Enjoy!
Notes:
Leftovers: Store in the fridge for 5 days or freeze in an airtight container.
No Maple Syrup: Use honey instead.
Nut-Free: Use sunflower seed butter instead of almond butter.
